Ambrosia fruit salad

Ambrosia fruit salad is a favorite of the kids, so make a big batch of this the next time you're having your child's friends over for a party!

There are probably as many ambrosia salad recipes as there are salad cooks - but common themes are pineapple, coconut, and a sweet creamy dressing. Some people love marshmallows in their ambrosia fruit salad. I don't consider them terribly healthy so tend to avoid them, but if my kids have anything to do with making the salad, they generally manage to sneak some in!

You can use canned pineapple for convenience, but if you have a fresh pineapple handy, it will taste that much better!

Ingredients

Diced pineapple, either 1 cup fresh, or one tin canned in pineapple juice
1 clementine, peeled and broken into sections, or one tin mandarin orange sections
1/2 cup miniature marshmallows
1/2 cup seedless green grapes
1/2 cup whole yogurt (it just won't taste right with low-fat yogurt)
1/2 tsp vanilla
1 Tbsp sugar
1/4 cup sour cream
3 Tbsp coconut flakes

Directions

1. Mix the yogurt, sour cream, vanilla and sugar in a serving bowl.

2. Add remaining ingredients and toss.

3. Cover and refrigerate for at least two hours. Serve chilled.
