Apple cider vinegar dressing

This apple cider vinegar dressing gives a light, zesty taste to simple salads of grated vegetables. It combines the health benefits of apple cider vinegar with those of hempseed oil, which contains essential fatty acids your body needs for optimum health.

Hempseed oil should always be kept refrigerated and away from light (which is why most hempseed oil is sold in black plastic bottles). And you should never cook with it as this destroys the essential fatty acids that are its main health benefit.

Our apple cider vinegar salad dressing includes not just apple cider vinegar, but a touch of fresh apple cider as well, since the apple cider adds the slight sweetness needed to counteract the acidity of the apple cider vinegar.

Ingredients

6 Tbsp apple cider vinegar
2 Tbsp fresh apple cider
2 Tbsp fresh squeezed lemon juice
6 Tbsp extra virgin olive oil
4 Tbsp cold-pressed hempseed oil
1 Tbsp minced parsley
1 Tbsp minced green onions (white part, or green part, or both)
1 tsp finely minced garlic
1/2 tsp salt

Combine the ingredients for this apple cider vinegar dressing in a mason jar or clean salad dressing jar. Tighten the lid and shake well (in that order!). Pour over a green leaf salad or a salad of shredded or grated raw vegetables. To spice it up you could add any of the following (one set only):
