Apple pear strawberry salad
This apple pear strawberry salad seems like an anomaly for someone who likes to stick to local, in-season fruits, but in act it's not. It seems the crop scientists have figured out how to produce fall-bearing strawberry plants, so in my home province of Ontario we get gorgeous local strawberries twice every summer - once in late June to early July, and once in mid-September, just as the apples and pears are coming out. This easy fruit salad recipe uses a little vinegar in the dressing to contrast the sweetness of the maple syrup, oranges and strawberries.
Ingredients
2 apples - tart if possible (Cortland, Spye)
2 ripe pears (Bartlett, Sugar, or Anjou)
1 quart fresh local strawberries
1 small orange
1 Tbsp vinegar
2 Tbsp maple syrup
Directions
1. Squeeze the orange to make 1/2 cup of fresh orange juice. Blend in the vinegar and maple syrup to make a dressing.
2. Wash and core the apples and pears, then slice into wedges. Place in a bowl and pour the orange juice dressing over top to keep the apple wedges from discoloring.
3. Wash the strawberries quickly (to avoid them soaking up rinse water). Discard any damaged or spoiled berries. Remove stems, and slice lengthwise. For large berries slice into lengthwise quarters.
4. Arrange the strawberries centered on top of the apple pear mixture. Only mix into the salad once it is time to serve - unless you want to keep small hands from high-grading and picking out all the strawberries first!
