Summer fruit salad recipe

Where I live, you can start making this summer fruit salad recipe once apricots are in season - since most of the other fruits are already available by then and the few that aren't local are usually available year-round.

This isn't the healthiest summer fruit salad recipe as I use whipping cream in the dressing, but you can cut back on that and use a cup of yogurt instead if you're concerned about your saturated fat intake. But if you really want to treat the kids, stick with the whipping cream!

Ingredients

1 pint raspberries
1 pint strawberries
1 pint blueberries
1 banana
2 kiwis
4 apricots
1/2 of a small musk melon
2 pears
1 pint whipping cream
1 tsp + 2 tsp sugar
1 tsp vanilla

Directions

1. Wash the berries carefully. Especially for the raspberries you should rinse as quickly as possible and be careful not to crush them. Trim the stems off the strawberries and slice the strawberries into quarters, or smaller for very large berries. Cut away any unripe parts of the strawberries. Set the berries aside.

2. Slice the banana into 1/2 inch slices and place in a large fruit salad bowl.

3. Peel the kiwis with a paring knife and slice each one into eight wedges, add to salad bowl.

4. Wash the apricots, halve, remove the pits, and cut into wedges. If you can't find fresh apricots you could use dried apricots instead but soak them in warm water for 15 minutes first. Place in bowl.

5. Remove seeds from the half muskmelon and use a melon scoop or teaspoon to scoop out balls of melon. Add to bowl.

6. Wash and halve the pears, and remove the cores and stems. Cut the pears into thirds (top to bottom) then for each third, cut wedges. Add to bowl.

7. Sprinkle the 2 tsp sugar on the fruits in the bowl (everything except the berries). Stir to coat all fruit.

8. Add the 1 tsp sugar, whipping cream, and vanilla to a mixer bowl, and whip the cream on high speed until it starts to sound hollow. Don't overbeat - you don't want a butter cream sauce!

9. Pour the whipping cream mixture over the salad and sprinkle the berries over that. Mix only at the last minute just before serving, to avoid mushing the berries and turning the whipping cream purple.

Warning: Kids will fight over this summer fruit salad recipe - the salad should be served by adults only. Any kid who complains that he didn't get as big a serving as Billy should have his serving given to Billy!
